I've been wanting to buy me some new herrings all week, but every time I go shopping I forget to drive by the fish shop. Thanks for reminding me :-)
It's been said that they are exceptionally good this year, but it may just be a publicity stunt.

Most foreigners (and some Dutch people too) find it disgusting to watch people eat them let alone to try one for themselves. But I like them once in a while. Glad to hear you like them too.

I've always thought beer would be the best alcoholic beverage for herrings, but I never drink vodka and hardly ever champagne. But white wine seems to be preferred for raw herrings, champagne is more for salted or smoked herring, at least according to this site:
raw: http://www.vinogusto.com/nl/gerechten-wijnen/695/vissen-haring
smoked/salted: http://www.vinogusto.com/nl/gerechten-wijnen/705/vissen-kipper-gezouten-en-gerookte-haring-
Some other site also suggests white wine like Muscadet or Chablis.

do you know what Jenever is? That's the more traditional drink.

cheers from Holland,

actually, you're supposed to eat them without the onions. that is, if the herring is fresh enough. the onions were originally used to 'mask' the taste when the herring, you know, had gone a bit off.
