Spaghetti with dark-simmered sausage and onion



This is really a winter dish from Ruth Rogers but I adapted it a bit for the summer.

Very straightforward, but do leave a lot of time - this is really a 2-hour preparation.

olive oil
3 Italian sweet sausage (get good ones), skins removed, sausage meat crumbled
1 large yellow onion, peeled and chopped
2 cloves purple garlic, minced
1 dried red chile, crumbled
3 dried Turkish bay leaves
1/3 cup red wine
14-15 oz can good Italian tomatoes, fully drained, tomatoes crushed in your hands
1/4 nutmeg, grated
1/3 cup whole milk
1/4 cup romano pecorino, freshly grated
salt
freshly ground black pepper
fresh sage leaves
1/2 lb dry spaghetti

Heat 1 tablespoon olive oil in a heavy bottomed pan over medium heat. Add the crumbled sausage meat and stir and fry until lightly browned. If it sticks, great. Now add the onion, garlic, chiles and bay leaves and cook over medium heat for 30 minutes until onions are lightly browned, stirring frequently. You will be developing a fond and there will be stickiness - it's all good.

Pour in the wine and stir, scraping up the bits stuck to the bottom of the pan, until the wine has evaporated - about 2 minutes maximum. Add the drained crushed tomatoes, lower the heat, and cook at a steady but low simmer for 45-60 minutes until you have an intense dark red mess. Stir in the nutmeg, milk, and Romano pecorino. Season with salt to taste.

Meanwhile, you have brought an extremely large pot of water to the boil. When you anticipate that you are approximately 10 minutes out on the sauce (the sauce can wait, so that part doesn't matter), add several massive handfuls of kosher salt to the water, cover, and bring to a rolling boil again. Now add the pasta all at once, stir, cover, and set the timer to a minute or so less than the minimum time specified on the pasta box. Once at a rolling boil again, remove cover, stir the pasta, and keep stirring occasionally until timer goes off. About 1 minute before the timer goes off, add a half-ladle of starchy pasta water to the sauce, and stir it in - you want to evaporate it so that the sauce is not watery, but you also want a certain amount of pasta starchiness so that the sauce combines well. You might end up adding a half-ladle full of pasta water a second time, and evaporate that too. Play it by ear.

Taste the pasta - it should be not quite al dente but not quite inedible either. Drain it in a colander and add it to the sauce pan. Toss, drizzling some more olive oil over the mixture, and continue tossing until pasta and sauce are well combined.

Serve into bowls, tear fresh sage leaves over each one. Add a fresh grind of pepper to each bowl and a fresh grating of Romano, and offer your guests the pepper grinder and more cheese to grate at the table.

Thurston Moore Band announce UK & European tour

Following The Thurston Moore Band’s (James Sedwards of Nought - guitar, Deb Googe of My Bloody Valentine - bass and Steve Shelley of Sonic Youth - drums) recent impromptu set at Café Oto in London, England, the group announce their first UK (& European) tour taking place soon after their dates in the US and Canada.

Uncut magazine were in attendance for the band's first show in London and had this to say about the live performance:

The New Pornographers - Brill Bruisers live from The Brill Building

Today NPR Music has announced a special concert event with The New Pornographers.

On Thursday September 4th The New Pornographers will perform their new album Brill Bruisers (available now) at the Brill Building as part of NPR Music's First Listen Live series: AC Newman - a pop songsmith in the grand tradition of Brill Building stalwarts Burt Bacharach, Neil Sedaka, Laura Nyro, Carole King and Lou Reed - celebrates the release of his band’s new album at the historic home of songwriting tradition in New York City’s Times Square. NPR will begin broadcasting the event on Tuesday September 9th.

Interpol : Stream 'El Pintor' via NPR's First Listen / Bowery Ballroom Show, Sept. 4

In addition, the set will be rebroadcast on KCRW's "Morning Becomes Eclectic" on Friday, August 29.

Yesterday, the band announced they'll be playing New York's Bowery Ballroom a week from Thursday (September 4) ; tickets go on sale this Thursday (August 28) at noon eastern. This show is completely sold out.

The Young - 'Chrome Cactus' Out Today / Waterloo (Austin) In-Store



Of The Young's 'Chrome Cactus', Tiny Grooves' Jonathan Markley writes, "the heavy guitar racket on becomes almost psychedelic, the slower burning shoegaze-bent anthems become seared into yer skull and the volume knob on yer stereo will slowly inch towards 10," and I'm pretty sure that's a recommendation rather than a disclaimer. The shadowy Fuckin' Record Reviews declares 'Chrome Cactus' is "THE HIGHWAY RECORD OF THE SUMMER" ("two guitars peel each other’s skins in empathy, acoustics are layered over top of wuzzy crunch and the groove is cinched"), The Austin Chronicle's Austin Powell says the album, "triumphs with energy and verve", and hey, while we sometimes find ourselves at odds with The Fourth Estate here at Matador Records and Filmworks, WHEN THEY'RE RIGHT, THEY'RE RIGHT.



'Chrome Cactus' is The Young's 3rd album, it's in stores today and whether you've been following this label since our inception or you still have the use of your original teeth, we're confident --- you might even say insistent --- that this quartet's uniquely Texan take on modern guitar heroics is matched only by their songwriting guile. I'm tempted to offer you a money back guarantee, but it seems kind of shallow to ruin our friendship over money (and I'm sure you agree).

The New Pornographers : 'Brill Bruisers' Out Today, Twitter Q&A at 12:30 eastern









Elaborate ceremonies to mark today's release of The New Pornographers' 'Brill Bruisers' ---- including but not limited to sky-writing and a high-concept videoclip about a radio station takeover that bears no relation whatsoever to the script for 1994's "Airheads" (which none of us have seen or even heard of)  --- will be briefly interrupted at 12:30 eastern for a Twitter Q&A (#AskTheNewP's).  You've only got half an hour to get your questions in, so this is no time to wonder if your inquiries are inappropriate or completely self-indulgent on your part.



'Brill Bruisers' is available in better record shops today (most of the shittier ones, too) but here's some options if no one will give you a ride :

Interpol : NPR First Listen Live Webcast From L.A., August 26

In advance of the September 9 release of the hotly anticipated 'El Pintor', Interpol will featured in a live webcast from Los Angeles' Mack Sennet Studios next Tuesday, August 26 at 7pm pacific (10pm eastern) for National Public Radio's "First Listen Live". Interpol's set -- hosted by KCRW's Jason Bentley --- will be viewable worldwide at KCRW.com and NPR.org/music, and will be available all NPR affiliates as well.

In addition, the set will be rebroadcast on KCRW's "Morning Becomes Eclectic" on Friday, August 29.

NPR Music will premiere a full album stream of 'El Pintor' starting this coming Tuesday morning, August 26.

On October 21, Matador will be releasing the latest solo album from Sonic Youth co-founder Thurston Moore, 'The Best Day'. Recorded in London with his new band --- featuring guitarist James Sedwards (Nøught), bassist Deb Googe (My Bloody Valentine) and SY drummer Steve Shelley, 'The Best Day' is a staggeringly confident, expansive work, one that not only rivals much of Moore's past work, but also suggests his relocation to England has inspired a creative rebirth of sorts. Keep in mind, we're already dealing with one of the harder working, prolific characters in modern music, rock or otherwise.

STREAM : The Young's 'Chrome Cactus' via Spotify/Noisey



While at least one observer has declared The Young's 3rd album, "HIGHWAY RECORD OF THE SUMMER" ("two guitars peel each other’s skins in empathy, acoustics are layered over top of wuzzy crunch and the groove is cinched,"), we're pretty adamant the Austin quartet's latest is a stone killer even if you're at a desk, comfy chair or riding the subway. You can find out for yourself starting today, as Spotify and Noisey are streaming 'Chrome Cactus' in advance of the August 25 release date.



Though the band's next batch of US touring kicks off August 29 in Los Angeles, Austin residents have the following events coming up in the next several days ;

1) LISTENING SESH :

Wednesday night, August 20, Austin's Whetstone Audio (2401 E 6th Street) will be playing the 'Chrome Cactus' LP from start to finish thru via DeVore Orangutan 0/96 speakers, the Line Magnetic 219ia integrated amp and Rega’s RP-10 turntable with a Dynavector Te Kaitora Rua cartridge. THIS IS NOT RADIO HUT. Smiling (?) label functionaries (functionary?) will hand out the beers.

2) WATERLOO INSTORE

Monday, August 25 at 5pm, The Young will be performing live at Austin's Waterloo Records, with refreshments provided by Austin Beerworks. A special edition of the 'Chrome Cactus' LP featuring a limited 12" X 12" screen print will be available at this instore.



3) LIVE AT HOTEL VEGAS

Thursday, September 4, The Young are headlining Hotel Vegas with a carefully curated bill featuring Breakout, Crooked Bangs & Slow.

At long last, The New Pornographer's highly anticipated new album Brill Bruisers is now streaming in full thanks to First Play on iTunes Radio. The octet of Newman, Collins, Neko Case, Dan Bejar, Blaine Thurier, Katheryn Calder, Kurt Dahle and Todd Fancey recorded in Woodstock and Vancouver (with additional portions done in Brooklyn, Austin and Vermont). John Collins and AC Newman produced. The colorful title track and "War On The East Coast" have already been at your beck and call, but now it's time for the rest of Brill Bruisers.
